Walking into a local *tabanco* can be overwhelming. Fino, Amontillado, Oloroso... but the wealth of our wineries goes far beyond wine. From the same oak barrels, two other world-famous products are born: Brandy and Sherry Vinegar.

Two key concepts make our wines unique:
- The "Velo de Flor": A layer of living yeast that grows on the surface of the wine inside the barrel. This "magic blanket" protects it from oxygen, giving it a fresh and light flavor. This is how Fino and Manzanilla are born.
- Oxidative Aging: Other wines age in contact with oxygen, giving them darker colors and more powerful, complex flavors of nuts and wood. This is how Olorosos are born.
- The Solera System: A method of blending wines from different vintages to ensure that the quality and flavor of your glass remain consistent year after year.

The king of the aperitif. A pale, totally dry, and light white wine with almond aromas. Always serve very cold.
Perfect pairing: Iberian ham, seafood, olives, fried fish.
A Fino wine, but aged exclusively in the wineries of Sanlúcar de Barrameda. The proximity to the sea gives it a characteristic salty touch.
A wine with a double life. It starts aging as a Fino, but then loses its yeast protection and ages with oxygen. The result is a darker, more complex wine with hazelnut aromas.
Perfect pairing: Game meats, powerful stews like oxtail.
The great mystery of Jerez. A wine that starts out wanting to be a Fino but, for almost magical reasons, develops Oloroso characteristics. Complex, elegant, and very special.
Cream: A blend of dry and sweet wine. Rich and perfect for dessert or with ice and a slice of orange.
Pedro Ximénez (PX): Dessert in a glass. Very sweet and dense, made from sun-dried grapes. Tastes like figs and coffee. Ideal over vanilla ice cream.
Jerez is also the birthplace of one of the best brandies in the world. It is distilled from wine and aged in the same barrels that previously held Sherry. You will find: Solera (young), Reserva, and Gran Reserva (aged).
It was Spain's first wine vinegar to obtain a D.O.P. A few drops can transform any dish, from a cold gazpacho to a meat stew. It is the best gastronomic souvenir you can take home.
